Breaded Insect Vegetables with Algae Mayonnaise

In order to face tomorrow’s environmental and food issues I have putt together a few recipes that take a more sustainable approach to eating and food consumption. See Grubs Up! for more details on what sparked my inquisitive need to cook with insects.
This delicious combination of insects and algae provides high proteins, vitamins and minerals. And only needs a few ingredients!
We often hear that insects and algae are “future food”… But these alternative proteins are more accessible today than you may realise. If you don’t tell your audience, they won’t even notice there are insects and algae in your recipe! The insects will be directly mixed in powder with the breadcrumbs and the algae will serve as the emulsifier and will replace eggs in your dip.

Ingredients for 5 peoples
1 box of ORIGINAL mealworms
30 g of breadcrumbs
Spices (paprika, salt, cumin, pepper…)
Flour
1 egg
4 carrots (or your favourite crispy vegetables)
1 jar of vegan sauce “THE GOOD SPOON”
Recipe
Turn your meal worms in powder with a food processor.
Mix in breadcrumbs, spices and salt and set to one side.
In a separate bowl, beat your egg.
Cut the carrots, bell peppers, zucchinis, cucumber or any other crispy delicacy into slices.
Take your veggies and roll them in the flour, then the egg and finally the insect-breading.
Heat a pan with oil on a medium temperature.
Once hot, cook your breaded-veg-sticks for 2 to 3 minutes on each side.
Put them on a paper towel to absorb the remaining oil.
Prepare a bowl with our favourite vegan sauce.
Serve them hot and enjoy them dipping in the cool mayonnaise!
